1. Welcome to Cayma & The Pisco Sour
Upon arriving at our private kitchen studio in Cayma, you will be warmly welcomed by our chef. As an icebreaker and introduction to our culinary culture, you will step behind the bar to mix, shake, and taste your very own Pisco Sour.
2. The Appetizer: Causa Rellena
With aprons on, we begin with a classic: Causa Rellena. You will learn how to properly mash and season native yellow potatoes with vibrant *aji amarillo* (yellow chili) and fresh lime, creating a stunning layered dish that is as beautiful as it is delicious.
3. The Masterpiece: Peruvian Ceviche
The star of the class is the legendary Ceviche. You will learn the exact timing and technique to cure fresh coastal fish. (Vegetarian Option: The fish is beautifully substituted with fresh tropical fruits or savory Andean mushrooms, maintaining the dish's vibrant citrus profile).
4. The Feast & Mango Mousse
